Ginger, Lime & Carrot Noodle Broth

Tasty and easy to make Ginger, Lime and Carrot Noodle Broth.

Recipe Ingredients

75g Noodles
½ an onion – sliced
2 cloves garlic – finely chopped
10g Fresh Ginger – Peeled and Finely Chopped
2 tsp East Asian Spice blend
400ml Water
½ Stock Cube
1 Carrot – Peeled & Cut into long strips
½ Lime – Juiced
½ Handful of Leafy Greens

Optional Ingredients

Fresh herbs, flaked almonds, chilli flakes, olive oil

Recipe Instructions

Prepare all vegetables as described.

Cook noodles in a saucepan with boiling salted water for 6-7 minutes – check for doneness, drain, rinse (in cold water) & reserve.

Cook onion over a medium heat in a saucepan with a little oil and a touch of salt until they start to soften (2 – 3mins).

Add garlic and ginger for a minute followed by the East Asian Spice Blend – stir to cook out the spices (30 secs).

Add the water, stock cube, carrots & leafy greens – bring to simmer then reduce to a low heat and cook for 8-10 minutes.

The carrots should now be tender, check them with a fork before adding the lime juice, then check for seasoning, adding a little salt if needed and any optional ingredients.

Add the drained noodles to broth and reheat (2-3 mins).

Enjoy.
