½ onion – sliced
2 clove garlic – crushed & finely chopped
2 tsp Mediterranean herb blend
1 courgette – long strips
½ tin butter beans or chickpeas – drained
½ lemon – juice
chilli / olive oil / parmesan
|Start cooking pasta as packet instructions in a sauce pan – use a timer, save 100ml pasta water before draining and reserve pasta in sauce pan.|
Add onions to a medium size saucepan with a little oil, cook until soft (3-4 mins).
Add garlic stir through for a minute then add herbs to saucepan, cook everything until fragrant (1-2 mins).
Add courgettes to saucepan, cook until soft (2-3 mins).
Add butter beans and 100ml pasta water to saucepan, warm through until steamy (3 mins).
Add the cooked pasta to courgette/bean saucepan return to the heat and warm pasta through (1 – 3 mins).
Add lemon juice and use tongs to mix everything together.
Check seasoning & serve with optional chilli, olive oil or parmesan.
