Prepare vegetables as described
In a bowl mix ginger, onion and lime juice together with a pinch of salt and allow 5-10 minutes for the ingredients to tenderize.
Now add the carrots and radishes to the bowl and mix everything together and allow the ingredients to sit together again for 5 minutes.
Finally add the olive oil to complete the salad and give everything a final mix before checking for seasoning and serving with any of the optional ingredients you have at hand.
