Recipe Ingredients
- 2 tablespoons of oil
- 1 Onion, finely diced
- 3 cloves of garlic, finely chopped
- Small chunk of ginger, finely chopped
- 1 fresh chilli, finely chopped
- Curry Spice blend (2 tbsp)
- 1 can chopped tomatoes
- 1 can chickpeas, drained
- Salt, to taste
- 100g rice

- Coriander to garnish
Recipe Instructions
Heat the oil in a pan on medium heat, add the prepared onion, garlic, chili and ginger. Cook until golden brown, about 6-8 minutes.
Add the curry spice blend and mix so everything is coated. Cook for a few more minutes until the spices smell amazing. Then add the drained chickpeas and mix well.
Finally add the chopped tomatoes and a pinch of salt. Mix well and boil very gently on a low-medium heat for 15-20 minutes, mixing often.
Serve with cooked rice.
