Curried Parsnip & Pear Soup

A spicy soup to warm the soul on a winters evening. Making the most of seasonal root vegetables and tinned fruit this dish will be great affordable recipe for you to bring out every winter. Great with a dollop of yoghurt or crumbled feta cheese and walnuts – yum!

Recipe Ingredients

½ onion – chopped
2 cloves garlic – peeled and finely chopped
1 tsp curried blend
2 parsnips – peeled and chopped (2-3 cm)
½ tin of pears
½ vegetable stock cube

Optional Ingredients

lemon, coriander, yoghurt, hand blender

Recipe Instructions

Prepare vegetables as described – if you’re not housing a hand blender to puree soup take extra care to chop vegetables very nicely (1-2 cm)

In a saucepan over medium heat sweat onion with a little oil until soft and translucent (3-4 mins),

Add the garlic and cook for a further minute

Then spices being careful not to make too much smoke (turn the heat down if needed).

Now add 400ml of water (same as one tin), the parsnips, tinned pears and crumble the vegetable stock cube in. Allow everything to cook together until the parsnips are soft, (15-20 mins) adding more water of needed.

This soup is fantastic blended so follow the manufacturers guidance and use an electric hand blender. Alternatively, you can enjoy this soup in a chucky style too.
Finally, taste and adjust seasoning (salt & pepper).
