Recipe Ingredients
200g potatoes – peeled & chunky diced (3cm)
50g handful green beans – trimmed & cut into 3 cm pieces
½ onion – diced (1cm)
1 tsp mixed herbs
2 cloves garlic – finely chopped
½ green pepper – medium diced – (2cm)
½ courgette – medium diced (2cm)
½ lemon – juiced
2 spring onions – finely sliced
½ baby gem lettuce – chopped
Optional Ingredients
- egg, mayo, olive oil, chilli, cheese, soft cheese
Recipe Instructions
Boil potatoes in salted water until done (10 – 15 mins), drain & reserve. Boil green beans in salted water until done (3 – 4 mins), drain & reserve. In a saucepan over a medium heat, sweat onion with a little cooking oil until soft (2 – 4 mins). Add garlic and cook out for 1 minute before adding mixed herbs – stir continuously to avoid too much smoke – turn down heat if necessary Add green pepper & courgette, keep cooking over medium heat until soft (3 – 4 mins). Remove saucepan from the heat and add reserved potatoes, green beans & lemon juice. Stir everything together taste and adjust seasoning (salt & pepper). To finish salad first place baby gem into serving dish followed by the potato salad, top with sliced spring onions and any optional ingredients – yum! |
